Caldo Verde - a recipe from Portugal

 

Caldo Verde

  60 ml / 4 tablespoon olive oil
  1 large onion, finely chopped
  2 garlic cloves, crushed
  4 medium potatoes, peeled and quartered
  1.7 litres / 3 pints cold water
  1 ½ teaspoons salt
  ground black pepper to taste
  1 lb kale, rinsed, stalks removed and very finely sliced

Cooking instructions

In a large saucepan over medium heat, cook the potatoes, onion and garlic in the water with the salt. When cooked, remove from the heat and mash everthing well whilst still in the water.

Return the pan to the heat and bring to the boil. Add the olive oil and the kale, stirring in well, then cover and simmer for 5 minutes (it is important not to overcook the kale) then serve.

Although it is not a Portuguese ingredient, a splash of Japanese soy in this soup really makes a difference.
