Salmon fillet, Garlic Mash and Salsa

  4 best fillets of salmon
  4 mediun potatoes peeled and quartered
  140 g / 5 oz fresh white bread crumbs
  4 garlic cloves, crushed
  4 spring onions, chopped
  2 sweet yellow peppers, seeded and chopped
  ½ a cucumber, peeled and chopped
  2 medium sized tomatoes
  Juice from 1 lemon
  60 ml / 4 tablespoons olive oil

Cooking instructions

Put the potatoes in a medium pan with water to boil for making mash.

Whilst the potatoes are cooking prepare the salsa. Into a small saucepan add the spring onions, peppers, cucumber, tomatoes, about a quarter of the lemon juice and a splash of olive oil. Simmer, stirring occasionally until lightly cooked, then take off the heat and keep warm.

When the potatoes are cooked, drain off the water and add the fresh bread crumbs, lemon juice, oil and the crushed garlic. Mash the mixture together and keep warm.

Sear the salmon fillets in a hot pan for 2 to 3 minutes each side. When cooked serve the salmon on a bed of mash and top with the salsa.
